Sandwiches

by John Phillips
(New York)

Perhaps the most underestimated food. You can have them made to order for guests, you can make them in advance and you can use lots of different kinds of bread. Think of BLT, egg, cheese or chicken. Just think of all the great panini sandwiches you can create with prosciutto, mozzarella, tomato, roasted peppers, chicken and some herbs.

Sandwiches are enjoyed by everyone and make a great addition to the range of graduation party food you will offer. Some easy to do sandwich ideas are:

Carrot and Cheese

Ingredients:

4oz of grated carrot
1 tablespoon of salad dressing
4 oz of grated cheese
1 grated apple

Put the ingredients in a bowl and add some salt and pepper to taste. Mix everything together and you are ready to make sandwiches using your favorite bread.

Creamy Cheese

Ingredients:

¼ diced red pepper
4oz of cream cheese
1oz of chopped cucumber

Beat the cream cheese in a bowl with a fork until smooth. Then mix in the pepper, cucumber, and add salt and pepper to taste. Again ready to fill the bread you choose.

Tuna

Ingredients:

! Small tin of tuna
2 tablespoons of mayonnaise
1 finely chopped stick of celery
1 finely chopped spring onion

Drain the tuna and add all the ingredients to a bowl. Add salt and pepper and mix well. All set to add to your bread!

Egg Mayonnaise

Ingredients:

Mustard
Cress
1 tablespoon of mayonnaise
2 hard boiled eggs

Boil the eggs and then mash them in a bowl. Add some mustard, cress, the mayonnaise, salt and pepper. Mix it all well together, again ready to add to your bread.

Ham and Chicken

3 tablespoons of fromage frais
2 oz of diced ham
1 diced, cooked chicken breast
1 tablespoon of chopped parsley

Beat the fromage frais in a bowl until smooth. Stir in the ham, chicken, parsley, salt and pepper. Filling is ready to add to your sandwiches.

Avocado

Ingredients:

1 avocado
1 finely chopped tomato
2 tablespoons of fromage frais

Cut the avocado in half and take out the stone. Scoop the flesh into a bowl. Mash the avocado and then add the tomato and fromage frais. Stir it all together and add to your bread.

I hope you like these very simple sandwich fillings. Of course if you have a local deli they may help you set up a sandwich bar where you can offer a great range of fillings with the sandwiches made to order.
