BBQ Kabobs

I love BBQ food and kabobs can be an excellent dish. One of my favorites is beef teriyaki. I make the teriyaki sauce and marinade the beef for at least 2 hours. I cut the beef into strips. I place the beef onto wooden skewers and then alternate between beef, a piece of pepper and an onion. Then I BBQ them. I occasionally pour more sauce until they are cooked. I serve them with green salad and the remainder of the sauce. This can make great graduation party food.

Great stuff, I can imagine cooking these in my backyard. Just to throw in an alternative idea:


Chicken Satay


Satay is a great sauce to have and can really make a great accompaniment.


Ingredients:


2 chicken breasts, skinned.

Marinade
4 tablespoons of sunflower oil
2 gloves garlic, crushed
3 tablespoons of fresh, chopped coriander
1 tablespoon caster sugar
1 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon soy sauce
1 red or green chilli, seeds taken out
Salt and pepper


Sauce
2 tablespoons sunflower oil
1 small onion, finely chopped
1 red or green chilli, seeds taken out and chopped
1 teaspoon of ground coriander
1 teaspoon ground cumin
8 tablespoons of peanut butter
8 tablespoons of chicken stock
1 tablespoon of coconut


Soak 8 wooden skewers on cold water for 30 minutes to prevent burning
Cut the chicken lengthwise into 8 strips and fit them to the skewers concertina style
Put all the ingredients for the Marinade into a food processor until smooth.
Coat the chicken with the marinade, cover and leave to chill in the refrigerator for more than 2 hours
For the sauce, heat the oil in a small pan and fry the onion and chilli until softened but nor browned. Stir in the spices and cook for 1 minute. Add the remaining sauce ingredients and cook gently for 5 minutes. Keep the sauce warm at the side of your BBQ.
BBQ the chicken skewers for 10 minutes or till cooked, keep adding marinade as you need. Serve with the warm sauce.



Of course you can create great Kebobs just by choosing meat you love, add mushrooms, tomato and other great things to your skewers.

This sounds great, can't wait to try it out. Don't know how to make teriyaki sauce but I am pretty sure I can buy it ready made from the supermarket.
